Piedmontese cattle originated in the Piedmont region of Northwest Italy. Alongside the fine wines and rich cuisines of which Italy is famous for. Today, the Piedmontese breed accounts for less than 1% of all cattle in North America. Yet, its quality rivals that of Wagyu and premium Angus, but without the heavy fat content typically associated with high quality beef.

What makes Piedmontese unique is its naturally occuring-genetic makeup. The animal develops extra muscle mass and very little fat due to having an inactive myostatin gene. Despite the absence of fatty marbling, the muscle fibers remain short and tender.
