For most of human history the heart and liver were the prized cuts — claimed first, never tossed. Our Ancestral Blend brings that tradition back: 90% whole-muscle Piedmontese ground beef milled with 10% heart and liver from the same animal. The result is a richer, deeper, more savory grind than ordinary ground beef — with a nutrient profile most steaks can't touch.
This is the kind of product chefs and whole-animal eaters seek out and almost never find at retail. We grind it in small batches from our own pasture-raised Piedmontese, a handful of cattle at a time. When it's gone, it's gone until the next harvest — there is no warehouse behind it.

Cooks 1:1 with regular ground
Burgers, tacos, chili, meatballs, bolognese — use it anywhere you'd use ground beef. Piedmontese runs lean, so it browns clean with almost nothing to drain.
How to cook it
Burgers: form 1/3 lb patties without overworking, cast iron or grill, medium-high, ~4 minutes per side. Pull at 130–135°F — the blend cooks fast and stays juicy.
Tacos · chili · bolognese: brown loose over medium-high, no oil needed — it releases enough of its own. 5–6 minutes; don't drain.
First time with an organ blend? Start with tacos or a hearty chili — the spices carry the deeper flavor beautifully and it's the easiest way to fall for it.
